Tuesdays at the table.....

TuesdaysAtTheTableSo today is Tuesday at the table and here is my recipe for Simmone's Pasta bake. If you want to join in please go to Andrea's" blog and sign up.
This is called Simmone's pasta bake as she is the one who showed me the recipe and I don't know what else to call it! SO there!

1 bag pasta, enough to feed who ever you are feeding.
load of chopped mushrooms
load of diced bacon
load of diced chicken breast
1 cup Mayo
1 cup apricot jam
1 packet of brown onion soup mix
load of grated cheese, which ever you like, I used Cheddar.

Cook pasta. Drain.
In frying pan fry chicken, bacon, mushrooms until done.
Add Mayo, jam and soup mix. Stir well and cook for about 7 mins.
Mix sauce into pasta and transfer to baking dish. Sprinkle cheese over the top and bake until cheese is bubbling and browning.
Enjoy!

Ok so I know that this is vague but it is really up to you how much meat and mushrooms you use. Also I know it is not hip/bum/tummy friendly but it is a great comfort food and is quick and easy to make. I hope you will try it!

P.S. So glad you're having a happy day!!! And I hate packing too. I pack for trips the night before and even then I don't want to.
