It's a meatless Monday.

I'm really trying to cut meat out of our diet as much as possible. Main reason for this is here in SA the price of meat has really gone up and the other reason is I just think its not too healthy to be eating meat too often. So in saying that I thought I would share a meatless recipe that I cooked for dinner tonight. Do what you will with it ;-)
Soba bowls
1 pound of whole wheat spaghetti
2 tablespoons of veg oil.
1 large onion, very finely sliced
2 large cloves of garlic, chopped
1 cup grated carrot
4 medium zucchinis sliced
15 mushrooms sliced 
3 handfuls of baby spinach
8 cups veg stock
1 cup bean sprouts
3 tablespoons toasted sesame seeds
1 tablespoon ground coriander
1 tablespoon chili powder
soy sauce

Cook spaghetti, drain and toss in a little veg oil. Set aside.

In large soup pot add 2 tablespoons of veg oil over medium heat.
Add the onion, garlic, carrots, and zucchini and cook until the onions are tender.
Add mushrooms and spinach and cook for 3 mins.
Add stock and bring up to simmer for 5 mins. 
Add sprouts and remove from heat.

In small bowl combine sesame seeds and spices.
To serve, use tongs to twist a portion of spaghetti into bottom of bowl. Splash on some soy and sprinkle with Sesame seeds and spices to taste. Ladle in the vegetables and broth.
