Cheesecake Brownies
Vegetable cooking spray.
2 cups plus 2 tablespoons all-purpose flour.
3/4 cup coca powder.
1 teaspoon baking powder.
1/2 teaspoon salt.
10oz (2 1/2 sticks) butter.
2 cups granulated sugar.
3 large eggs.
2 1/2 teaspoons vanilla extract.
8oz cream cheese.
1/2 cup icing sugar.
1. Preheat oven 180c/ 325f. Coat a 9x13 inch baking dish with cooking spray and then parchment paper. Then spray paper with oil.
2. Sift flour, cocoa, baking soda, and salt together. Cream butter ad granulated sugar with a mixer until smooth. Add 2 eggs and 2 teaspoons of vanilla, and beat until smooth. Reduce speed and slowly add flour mixture.. Increase speed until incorporated.
3. Reserve 1 cup of the mixture and press the rest of the mix into dish. Refrigerate for 30 mins and then bake until edges are puffed up, about 25 mins. Let cool on wire rack.
4. Mix cream cheese, icing sugar, and remaining egg and 1/2 teaspoon vanilla in a medium bowl. Spread over cooled base, crumble reserved dough on top. Bake until filling is set, 20-25 mins.
Let cool in dish, remove and cut into squares.

these look yummy (although, cheesecake makes me sick - i think it's the cream cheese)
