Tuesdays at the table.

TuesdaysAtTheTable Welcome to Tuesdays at the table....Here is my recipe.

Honeyed Pork Stew

1-1.2kg boneless pork belly (I use thin chops and cut off fat)
salt & pepper
1/2 cup flour

olive oil
200g haricot beans (tinned or soak over night)
500ml med cider
600ml chicken stock
1 onion
1 tbls tomato puree
4tbls honey
2 tbls worcester sauce
herbs
2 leeks
1 celery stick
3 med carrots

Method

1. Slice onions, carrots, celery & leeks and fry in olive oil
place in caserole dish or slow cooker

2. Cut up pork into small pieces and coat in seasoned flour, fry in frying pan
3. Add stock, cider, honey, worcester sauce and tom puree, cook until thickened
4. Add to pan, mix ingredients and bake in oven or slow cooker.

Depending on how much you are making you may have to take out some of the meat before adding the stock etc. The recipe didnt use flour but I thought it would be too watery without it. Works great in the slow cooker.

Really nice with baked potatoes and vegetables roasted in olive oil and balsamic vineger
